I’ve lost count of the times people have said to me “crepes are just pancakes and it’s not pancake day”
I’m also always being told that pancakes (or crepes as we like to call them) are sweet. Who’d even have though about ruining them with cheese, ham and even BBQ sauce. God forbid we even move the jar of Nutella, lol!
But the truth is, crepes are an amazing and very versatile street food – just ask the French, they LOVE them! But it’s been a battle. It’s actually very easy to change peoples minds when they are stood on the ramp up to the serving hatch on our horse box, watching us make a crepe live in front of them (I’ve always called what we do “performance food”). It starts with the amazed expressions when they see the batter evenly spread over a huge cast iron plate (OK, there are a few tricks of the trade involved here, but honestly, it’s not quite as easy as it looks – just ask some of my staff) and as the filling get added they are usually completely won over. We regularly here “do I really get all of that” and “that looks amazing”. Then they bite into one and we have a brand new convert to savoury crepes. Even the people who just can’t bring themselves to go all the way usually leave realising that sugar and lemon isn’t the start AND finish for a pancake. Even the sweet crepes are crammed full of yummy things. But it’s not quite as easy to convince people who aren’t there in front of us watching us. The people who get frustrated trying to flip the traditional Shrove Tuesday pancake and failing. It’s those people (maybe you, who knows) that we want to convert and bring into the crepe inner circle and hopefully turn them into savoury converts. I’m afraid the best we can do is ask you to trust us. But to help with that trust, we can tell you about the fresh and high quality ingredients we use – I remember a French chef once telling me “never cheat with your ingredients” – and we don’t. If we use ham, it’s the best we can get, the cheese is always fresh, the onions selected by hand and chopped fresh moments before service. But we also want you to forget the thin flimsy “pancake day” offering you may be used to. When we fill our crepes, we FILL our crepes

I could go on, but I hope you get the idea. We just love what we do and are always working on new and exciting new ideas.
Before I finish, it would be wrong not to touch on food preferences. It’s such a big part of life these days and something we really feel is very important. Crepes are certainly not just for pancake day, but they are also certainly not just for certain people. We can cater for most food intolerances – so nuts, dairy, egg free and so on are not a problem at all. If you happen to be vegetarian, that’s not a problem either. But we are absolutely delighted to have found something that’s perfect for our vegan customers too. We have a completely vegan crepe batter and a range of vegan fillings. we even have vegan cheese….
